THE ORIGIN OF THE PIZZA:


The Romans of the old empire were consuming in the 1st century a cooked mass similar to the bread, of circular form, flavoured with herbs and seeds. They had copied this food of the Greeks and of the Etruscans, who were elaborating a cooked mass with flavour.

It was needed fourteen centuries up to the discovery of America in order that the tomato was appearing in Europe. It was brought of Peru. Initially people were considering it to be a toxin or with magic power. Initially the tomato was used for decorating, but with the time people encouraged to eat it, and since then it begins the real history of the pizza. In the beginning, the cheese was not forming a part of the preparation (one was using only tomato, basil and herbs). Its introduction took place in 1889 in the city of Naples.

The queen Margarita had heard speaking about this food and this was because she sent the baker Rafaele Espósito, of the pizzeria " Pietro il pizzaiolo " the order to prepare a pizza for her. The baker wanted to adorn this pizza with the colors of Italy and added the red one of the tomato and the green one of the basil, the white of the mozzarella cheese. He called to his invention " Margarita pizza ".

In The United States it came in 1905, but it became popular at the end of the war, for the diffusion that the soldiers who were returning from Europe gave to it. France has its own rectangular "pisaladière" to the Roman style. Spain, it specializes in pizzas of different and sometimes of unusual fillings. In Middle East bread is " pitta " In China the mass is cooked to the steam, and is served as small pizzetas with different flavours.
